Navaratri is considered to be one of the most important festivals of India. It is celebrated through out the country  It is a festival of worship, dance and music and is celebrated from the first to ninth date of Ashwin Shukla Paksha of the Hindu Calendar for the worship of Goddess Durga. North Indians celebrate the 9 days of Navratri watching the annual Ramlila performances under the post-monsoon skies full of twinkling stars. For 9 days, women wear their best saris and beautiful jewellery, and attend late night cultural programmes of music and dance.
In thes days many people do fast .they take some special food.


Here i m giving some navratri special recepies hope u like it



 


 



1.Vrat ka chawal -



 
Ingredients:



2 cloves
3 cup water
2 cardamoms
30 gm ghee
2 tsp sendha namak
1 tsp cumin seeds
2 green chillies
125 gms samwat ke chaawal
coriander leaves for garnishing
1 big size potato, diced
cinnamon stick, tiny piece


 



How to make vrat ke chawal :


Heat up ghee, mix in cumin seeds, cloves, cardamoms and cinnamonand green chillies.
When slightly coloured, mix in potato and rice.
Stir-fry till they look a bit fried.
Mix in salt and water, and bring to a boil.
Lower the flame and simmer, covered, for about 15 minutes or till cooked through and the water is absorbed.
Decorate with corinder leaves and serve hot.


 


2.ALOO MEWAWALA


 



Ingredients:


 



1 cup oil
1 tblsp ginger paste
salt to taste
12 medium potatoes, peeled
1 tsp cumin seeds
1/2 cup coriander leaves, cut
4 tbsps. cream
2chillies
1 tblsp sugar
1 tsp garam masala
1/2 cup mixed almonds and pistachios, coarsely ground
3 tomatoes pureed


 



How to make aloo mewawale :



Bore a hole into each potato.
Stuff with nuts mixed with salt and a few coriander leaves.
Close with potato pieces.
Heat up ghee and fry 2 or 3 potatoes at a time till browned.
Remove and reserve.
In the same ghee, put in cumin seeds.
then pour jeera powder
Then mix in powdered spices, tomato and ginger paste.
Fry till oil separates from the paste, mix in potatoes and one and a half cup of hot water.
Simmer, adding cream, salt and sugar till potatoes are cooked and the gravy is well blended.


 



3.kotu/kuttu aur aalo ka pakora
 


Ingredients:


1 cup kotu ka atta (buckwheat up flour)
1/4 cup finely cut coriander leaves
1/2 tbsp black pepper powder
ghee or vegetable oil for frying
3 medium sized potatoes (boiled whole till half-cooked)
1/2 tsp sendha namak (rock salt) or to taste


 



How to make kotu aloo pakora :



Combine the flour, salt, pepper and coriander in round dish and mix well.
Mix in water and cream into a smooth batter.
Cream the batter until it is of cream consistency.
Cover and keep aside for about 20 minutes.
When the potatoes are cool enough, take off and slice each one into diagonal slices.
Heat up enough ghee or oil for deep-frying in a kadhai over moderate heat.
Put few slices of potato into the batter and cover them completely.
One at a time, lower each slice of batter-coated potato into the hot oil.
Fry as many slices as will float on the surface of the ghee without touching.
Fry on both sides until reddish gray and crisp.
Serve hot as the fitters soften as they cool.


 


 


4.Coconut Chutney Recipe



Ingredients:
3 Green Chillies
2 Tbsp. Coriander chopped
1 Lemon Juice extracted
1 Cup Fresh grated coconut
1/2 Tsp. sugar
sendha namak


Method:
Crush together Coconut, Chillies and coriander
Add  sugar, salt and lemon juice
Blend in Mixie, using minimal water
Dispense into serving dish


Garnish with minute bits of chopped coriander, if desired
Serve as accompaniment with Paranthas, Khichidi, Pakoras etc.


 


5. Paneer ka kheer



Ingredients


• 1 litre milk for making Paneer* 
• Juice of 1 lemon 
• 1 litre milk for milk pudding 
• Sugar to taste, approximately half a cup 
• A few strands of Saffron 
• 1 tsp. illaichi (green cardamom) powder 
• 7-8 blanched almonds, chopped 
• 5-6 green pistachios, blanched and chopped 
• *If you don’t want to make your own paneer, you can use 200 gm. ready-made paneer, grated. However, fresh tastes best.



Instructions


1. Boil 1 litre of milk in a pan. Once the milk comes to boil, add lemon juice, a little bit at a time, until milk curdles. Don’t add lemon juice until milk has come to boil, or it may not curdle quickly. 
2. Once the cheese and whey separate, turn the heat off. Strain it through an old handkerchief or muslin, placed over a colander or large sieve. Discard water. The solid that is left is paneer. 
3. Wash the paneer with cold water, to get rid of lemon juice. Break paneer up with a fork and keep aside in a bowl. 
4. Bring second litre of milk to boil in a heavy bottomed pan. Simmer until reduced to half. Stir frequently to stop it from ‘catching’. 
5. Now add paneer to the simmering milk. Bring to boil again and simmer for 10-15 minutes. 
6. Add almonds, saffron, cardamom powder. 
7. Add and adjust sugar. 
8. Serve chilled.

 Friday the Thirteenth :Friday the Thirteenth Christ was crucified on Friday and the number of guests at the party of the Last Supper was 13, with the 13th guest being Judas, the traitor. Therefore it is thought that evils spirits are strong on Friday the thirteen.

 Walking under a ladder - A leaning ladder forms a triangle with the wall and ground. Triangles represent the Holy Trinity, and violating the Trinity by breaking it (walking through it) would put you in league with the devil himself.

Wedding Superstitions

 If the groom drops the wedding band during the ceremony, the marriage is doomed.

 If a single woman sleeps with a piece of wedding cake under her pillow, she will dream of her future husband.

 Take a photograph of the one you love and hold before it a ring on the end of a thread. Be careful to keep your hand still. If the ring moves in a circle, you win marry the person in the picture soon and will lead a life of bliss; if the ring moves to and fro, it is unlikely you will marry him. Should the ring not move at all, you are likely to remain single.

 The best time for cutting one's corns is when the Moon is on the wane.

 If a front door does not face the street, ill luck will attend the house. You should always close a front door with your face towards it.

Paneer Frankies 


Ingredients :

















For the dough :



  • 1cup maida

  • 1/2cup milk

  • Salt

For Filling :



  • 125gm Paneer (cut into 1"length strips)

  • 1tbs oil

  • 1cup onion heaped (cut length wise)

  • 1tbs butter

  • 1/4cup coriander

  • a pinch of tandoor colour

  • 1/4tbs finely cut green chillies

For Grinding : 



  • 5-6 whole red chillies

  • 6 cashews

  • 10 garlics


Method of Preparation : 


Make dough with maida, milk and salt. Cover it with a wet cloth and keep aside for half an hour. 


Soak the ingredients for grinding in milk for half an hour and grind it to a paste.


Heat oil in a kadai, add butter. Sauté the onions till transparent, add the ground paste. Stir fry and add salt and chillies. Then add the colour mixed in a spoon of water. Sauté till raw smell goes. Add paneer and mix well. Remove from fire.Garnish with coriender leaves.


make chapatis with the dough and cook on tava with littile oil,remove place some filling at the edge of the chapati. Then rap each roll in a strip of butter peper and place it in hot case or oven .


now enjoy it.
